A cross between bitter orange (Seville orange) and lime (sweet lime), bergamot originates in Southeast Asia and is grown in Calabria. In season, the tree bears fragrant white flowers that later yield fruit, which ripens and turns yellow. Essential bergamot oil is obtained through cold expression of its outer peel.
